I recently tried a couple of the BOSH! Simple Recipes. Both had the advantage of few ingredients which is useful for a novice like me.
Chocolate Chip Cookies (pg 231)
Apart from reducing the sugar content by a third, I kept to the recipe and the soft biscuits tasted good.
Crispy Chilli Tofu (pg 46)
An interesting combination of sweet and sour flavours which work well together. The only reservations I had were the amount of oil and that reducing the sauce for almost 10 minutes uses a lot of energy and probably removes some of the lemon and orange aromas.
So, along with low fat, low sugar, high fibre, no-meat and dairy recipes we should be looking for low carbon footprint recipes.
I haven’t seen any recipe books that give carbon footprints but there probably are some. Any ingredient will have a range of CO2 footprints depending on how and where it is produced, but it should be possible to account for that.
