When I was young my parents took me on holiday to Briec in the Brittany region of France. We stayed at a rambling hotel run by Monsieur Le Berre. I had never been abroad before and the language, sounds and sights were fascinating.
A particular impression was the soup served first at every meal. A delicious aroma would waft in from the kitchen. Then the soup would arrive, thick, creamy, and full of flavour.
So when I was given a Hand Blender [1] for christmas last year I was very pleased to find that it easily recreated the textures of the Briec soups. I’ve used it today. The vegetables themselves are enough to produce a great flavour, but it has to be said that there’s more work to be done to achieve the level of Mr Le Berre.
